Cheers to summer with a Sarti Spritz! Combine the effervescence of a classic spritz with the bright and tropical pink-hued aperitivo that feels like searching for the Holy Grail. This fruity spritz will turn your world upside down in the very best way.

The rumors are true. Sarti Spritz was hailed as the "drink of the summer" in 2025 throughout Europe. But if you ask me, I think its popularity has just begun. This blush pink summer cocktail can be hard to find even across the pond, but once you try a taste, you'll never want to go back to other spritzes.
If you find Aperol Spritz and Campari Spritz a bit too bitter, or you simply prefer lighter, more tropical flavors, the Sarti Spritz is for you! Not only does it feature the loveliest pink hue, it boasts the flavors of Sicilian blood orange, mango, and passion fruit with the perfect effervescence of a well-balanced summer spritz.
I made it my mission when visiting Rome in 2025 to not only find somewhere to try the elusive Sarti Spritz (Il Marchese was the winner for me!) but also to purchase bottles of Sarti Rosa to bring home with me to make it myself. Why? Because at the time of this post Sarti Rosa is not available in North America. Hopefully that will change soon (fingers crossed)!
This shouldn't stop you from making it though. I'll share a couple other options for stand-ins that you could try that would get you fairly close to the original. In case you're traveling there, I purchased my Sarti Rosa at Enoteca Bernabei Trastevere in Rome. Bottles of Sarti Rosa were not on display with the other aperitivos, but when I asked a staff member, he immediately uncovered a hidden stash! You never know when you may get lucky.
Ingredient notes

- Prosecco: Although you could use another sparkling wine like Spanish cava or French Champagne, I recommend sticking with prosecco which comes from Italy. Ideally, select a brut or dry prosecco for this cocktail to avoid making it overly sweet.
- Sarti Rosa: Sarti Rosa is an aperitif liqueur infused with Sicilian blood orange, mango, and passion fruit. At the time of this post, it's not distributed within North America. If you're traveling to Europe you'll have a better chance of finding a bottle to bring back home with you. If you're in Rome, try Enoteca Bernabei Trastevere.
- As an alternative, you could try using X-Rated Fusion Liqueur which has the same flavor profile (blood orange, mango, and passion fruit), a higher ABV (17% vs 14%) and features premium French vodka as its base. Although it uses French vodka, it's owned by Gruppo Campari which is the same Italian company which makes Campari, Aperol, and yes, Sarti Rosa. At a lower price point, you could also try Kinky Pink Liqueur which is also vodka-based with the same flavor profile as above.
- Another alternative you could try is Ramazzotti Aperitivo Rosato. It features floral-fruity flavors of hibiscus and orange blossom (not quite the same as Sarti Rosa and X-Rated Fusion Liqueur) with a 15% ABV and a bright rosé hue.
- Club Soda or Seltzer Water: This adds volume and more bubbles to the drink, balances the wine and liqueur, and dilutes some of the sweetness. Make sure you use unflavored club soda or seltzer, as to not change the flavor of the drink.
- Lime or Grapefruit: A slice of lime is the "official" garnish for Sarti Spritz according to the brand. When I sipped this delightful libation in Rome, however, mine was garnished with grapefruit. The lime provides a popping contrast of color while the grapefruit matches the pinkness of the drink and complements the flavor of the spritz more closely.

How to make it
Fill a wine glass half full with ice. Add prosecco, Sarti Rosa, and club soda or seltzer water. Give the mixture a gentle stir to combine.
Garnish with a half a slice or a wedge of grapefruit or a slice or wedge of lime. Serve immediately.

Expert tips
Make sure to chill all the ingredients before making your Sarti Spritz. This will dilute less of the ice when mixing everything together. Your drink will stay cool and refreshing, and taste better longer.
Be gentle when combining the ingredients. You don't want to lose the carbonation in the prosecco and club soda/seltzer water. For the same reason, serve your drink immediately after making it to retain all those fizzy bubbles!
Only making one or two cocktails? Purchase small individual bottles of prosecco and cans or mini bottles of seltzer or club soda instead of larger bottles. You can easily put together a glass or two without having to open a big bottle!
A regular 750 ml bottle of prosecco will yield 8 to 9 sarti spritzes while a mini 187 ml bottle will yield 2 spritzes. The larger bottle is better bang for your buck but sometimes it's worth it to have the mini ones on hand if you don't plan to make a lot.
Need to keep your full size bottle of prosecco bubbly for a while longer? Use a Champagne stopper to seal the bottle tight and retain its bubbles. It will keep sparkling wine bubbly for up to 3 days after opening.
