I know a lot of people may claim to make the world’s best anything, and I generally never use that title except for when I’m really convinced. Let me tell you, I’m convinced 🙂 This black bean and corn salsa is really delicious! I wanted to make a tasty salsa using these ingredients, but I didn’t want to make a dry/chunky one like most recipes I’ve seen, but instead a more saucy salsa, which is more my style. It is still very chunky, filled with lots of beans and corn, but it’s all bound together with a flavorful tomato-based sauce. I used canned black beans and frozen corn to make it easy, but if you wanted to be all natural (and I don’t blame you), you can cook your own black beans from scratch, cook and cut fresh corn off the cob, make your own tomato sauce, etc, but I think this is perfect for when you want to whip up a batch of salsa without overexerting yourself. And trust me, when you have a craving, you don’t want to overexert yourself 🙂 Immediate gratification is what it’s all about!
